An Oxtail Recipe You Will Love!

I am not a Chef 👩🍳 but I can cook my behind off! 🔥 My Oxtail recipe is a hit! Save money cooking more and eating out less!
Okay let's get into it:
Cleaning your Oxtail:
*One lime cut and squeezed into the meat and massaged through all pieces.
*Add vinegar to the meat and massage in then let it sit.
* Some salt.
*Add boiled hot water and let sit in the bowl of vinegar and Lime mix.
*Once water is not hot rinse your meat from the bowl and place into a strainer bowl.
*Boil more hot water and dump on the rinsed meat again. Move meat from strainer into a clean bowl to begin seasoning.
For 3 -4lbs. of Oxtail, please find below:
Seasoning
Liquid Ingredients:
1 Tbsp Walkerswood Traditional Jamaican Jerk Seasoning (Mild) (2 spoon of just the mild using the Hot version later)
2 Tbsp of Minced Garlic
2 Tbsp Grandmas Molasses
2 Tbsp Soy Sauce
2 Tbsp Worcestershire Sauce
2 Tbsp Browning & Seasoning Sauce
3 Tbsp of Haitian Epis (Substitute: with one onion chopped, and 3 Stalks Scallion chopped, and red and green bell peppers chopped).
2 Tbsp of Ketchup (using in hour 3)
1 Tomato (using in hour 3)
1 can of Butter Beans (Using in hour 4)
2 Cups of Chicken Broth (1 cup for beginning of hour 2 and second cup in hour 3).
3 cups of water (add two cups in the beginning of hour 2 and add last cup in hour 3).
2 Tbsp virgin oil (for cooking)
1 Tbsp of butter
1 can of Butter Beans
Dry Seasoning
1 Tsp of salt (please taste test while cooking I really don't measure; I'm estimating it's a teaspoon of salt it may be a little more)
A coat of All Spice
A coat of Blue Moon Oxtail Seasoning
A Tsp of Dry Jerk Seasoning
Hand full of Spring Thyme (used in hour 3)
A Tsp of Black Pepper
Season with everything listed above other than the items in (..)
Place Oxtail in the fridge in a bowl to marinate over night or for at least four hours.
4 Hours and 10 Minute Cooking Steps:
Hour One
Add the olive oil and butter to a flat plan on mid high. Add the marinated oxtail DO NOT add water. Let it cook in the marinade. Make sure all pieces are flat in the pot and not on top each other. It is best to cook your oxtail in a pan. Cook each side with top on, on medium high for thirty minutes on each side. Once brown on each side, you will notice the marinade thickening this is good. Remember, medium high will cause it to cook intensely make sure you're not burning it if so, turn down a little.
Hour Two
Add the first cup of chicken broth and two cups of water. Also add the one additional spoon of Tbsp Walkerswood Traditional Jamaican Jerk Seasoning (Spicy not the Mild). Cover and let cook for an hour with the top on stirring every thirty minutes.
Hour Three
Add another teaspoon of the mild jerk sauce, add the ketchup,tomato, and thyme.Cover and let cook for an hour with the top on, on medium high stirring every thirty minutes.
Hour Four
You will notice some drying by hour 4. If it's a lot, turn down a tab bit more. Add the last cup of chicken broth and last cup of water. With thirty minutes left, add the canned butter beans. For the last thirty minutes on medium low, the canned butter beans. Let sit on low heat for another 10 minutes
